Avocado toast is usually a one-note thing: fat on carbs. Fold a cup of mashed cannellini beans into the avocado and it turns into a real meal — the beans add protein and fiber, thin the richness, and stretch one avocado across two plates. On whole-grain bread with olive oil, tomatoes, and lemon, a single slice touches four MIND food groups before you have even sat down.

The mash is the whole trick. Beans and avocado both break down under a fork, so they bind into one spread instead of sliding off the toast the way plain avocado does. Keep it coarse — a few whole beans and avocado chunks give it texture.

Ingredients

  • 2 slices whole-grain bread
  • 1 cup canned cannellini beans, drained and rinsed
  • 1 ripe avocado
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh herbs (parsley, basil, or dill)
  • Salt and black pepper to taste

Steps

  1. Tip the drained cannellini beans and the avocado into a bowl with the lemon juice, half the olive oil, and a pinch of salt. Mash with a fork to a coarse, spreadable texture — leave a few beans and avocado chunks whole for bite.
  2. Toast the bread until crisp and golden. A firm slice holds the topping without going soggy.
  3. Spread the bean and avocado mash thick over each slice. Scatter the halved cherry tomatoes on top, drizzle with the remaining olive oil, and finish with the red pepper flakes, fresh herbs, and a few grinds of black pepper.

Notes and swaps

Any white bean works: great northern, navy, or butter beans all mash the same way as cannellini. Chickpeas make a firmer, nuttier spread if that is what is in the pantry. Sourdough or a dense seeded loaf holds up better than soft sandwich bread, which can go limp under the mash. For more heft, add a soft-boiled or fried egg on top, or a few slices of smoked salmon. Swap the cherry tomatoes for thin radish, cucumber ribbons, or quick-pickled red onion when tomatoes are out of season. A little lemon zest or a pinch of flaky salt at the end sharpens the whole thing.

FAQ

Which white beans are best for this? Cannellini mash into the creamiest spread, but great northern, navy, and butter beans all work. Canned is fine — drain and rinse them well so the toast does not go watery.

How do I keep the toast from getting soggy? Toast the bread until it is genuinely crisp, spread the mash just before eating, and drain the tomatoes if they are especially juicy. A firmer, denser loaf holds up far better than soft sandwich bread.

Can I make it ahead? The mash browns once cut, so it is best fresh. If you need a head start, press plastic wrap directly onto the surface of the mash and refrigerate it for up to a day, then stir in a little extra lemon before spreading.

Is this filling enough for a full meal? For breakfast or a light lunch, yes — the beans bring protein and fiber that plain avocado toast lacks. Add an egg or a side of fruit if you want more.

How does this fit the MIND diet? It stacks whole grain, beans, other vegetables, and olive oil in one dish, which is most of a MIND meal built in. Not sure how to read a recipe like this at a glance? See how to read a recipe at a glance, and the MIND overview lays out the full pattern.
