Salmon over quinoa is the MIND plate in a single bowl: a piece of fish, a whole grain, a bed of greens, and vegetables, all brought together by olive oil in the dressing. The salmon roasts in about ten minutes while the quinoa steams, and the raw cucumber and cherry tomatoes need nothing but a rough chop. A lemon-olive-oil dressing with a little Dijon and dill ties the warm and cold parts together.

The bowl runs as two short tracks at once. Quinoa simmers on the stove and the salmon roasts on a sheet pan, so both are ready at the same time. Whisk the dressing while they cook, then assemble.

Ingredients

  • 4 salmon fillets (about 6 oz / 170 g each), skin on or off
  • 1 cup quinoa, rinsed
  • 2 cups water or broth
  • 5 tablespoons olive oil, divided
  • 1/2 teaspoon salt, plus more for the salmon
  • 1/4 teaspoon black pepper
  • 4 cups baby greens (spinach, arugula, or a mix)
  • 1 1/2 cups sliced cucumber
  • 1 1/2 cups cherry tomatoes, halved
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chopped fresh dill or parsley

Steps

  1. Bring the quinoa and water to a boil in a saucepan, then cover and simmer 15 minutes until the grains are tender and the liquid is absorbed. Take it off the heat, fluff with a fork, and let it steam another 5 minutes.
  2. Heat the oven to 425°F. Pat the salmon dry, rub with 1 tablespoon of the olive oil, and season with salt and pepper. Roast on a lined sheet pan 10 to 12 minutes until it flakes at the thickest part. To pan-sear instead, cook skin-side down in a hot skillet 4 minutes, then flip and cook 2 to 3 minutes more.
  3. Whisk the lemon juice, Dijon, salt, and the remaining 4 tablespoons olive oil until it emulsifies, then stir in the dill. Thin with a splash of water if you want a lighter pour.
  4. Divide the quinoa among four bowls and top with the baby greens, cucumber, and cherry tomatoes. Set a salmon fillet on each, flaking it into large pieces, and drizzle everything with the lemon dressing.

Notes and swaps

Brown rice, farro, or barley all stand in for the quinoa if that is what you have, though quinoa cooks fastest. For a creamier finish, swap the lemon-olive-oil dressing for a yogurt-dill version: whisk 1/2 cup plain Greek yogurt with the lemon juice, a little olive oil, and the dill. Canned or leftover cooked salmon works when you want to skip the oven entirely. The vegetables are a template, so add avocado, red onion, olives, or roasted peppers depending on what needs using up. A pinch of za'atar or a crumble of feta over the top rounds it out.

FAQ

Can I make this ahead for meal prep? Yes. Cook the quinoa and salmon and store them separately from the greens, cucumber, and tomatoes for up to three days. Keep the dressing in its own jar and build each bowl the day you eat it so the greens stay crisp and the salmon does not dry out. Cold salmon over quinoa makes a good desk lunch.

Should I bake or pan-sear the salmon? Either works. Baking at 425°F is hands-off and even, which is easier when you are also minding the quinoa. Pan-searing gives you a crisp skin and a browned surface in less time if you would rather stand at the stove. Cook to just-flaking at the thickest part and stop there.

How do I keep the quinoa from turning mushy? Rinse it first, use a 2-to-1 liquid ratio, and let it steam off the heat for five minutes before fluffing. That rest lets the grains firm up instead of clumping.
