Ingredients

Steps
- Warm the olive oil in a wide pot over medium heat. Add the onion and cook 4 minutes until soft, then add the garlic and mushrooms and cook 6 to 8 minutes, until the mushrooms brown and their liquid cooks off. Stir in the thyme, salt, and pepper.
- Add the barley and stir 1 minute to coat. Notes and swaps
Cremini mushrooms brown deepest, though a handful of dried porcini (soaked, with the soaking liquid stirred into the broth) adds real depth. Any hearty green folds in at the end — kale and chard want a minute longer than spinach. Farro or short-grain brown rice can stand in for the barley, with the timing adjusted to the grain. The parmesan is optional and keeps the dish's cheese light; skip it and finish with extra lemon and olive oil instead.
