Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/4 cup fresh parsley, chopped (or a mix of parsley and mint)
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
Steps
- Whisk the olive oil, lemon juice, minced garlic, oregano, and salt in the bottom of a large bowl until the dressing looks emulsified.
- Add the drained chickpeas, cucumber, cherry tomatoes, red onion, and parsley to the bowl.
- Toss until everything is coated, then taste and adjust the salt or lemon. Serve right away, or chill 20 minutes to let the flavors settle.

Fresh mint in place of half the parsley brightens the whole bowl, especially in summer. No cherry tomatoes?
