Cod is a mild, forgiving fish that turns a weeknight dinner into something that reads like the coast of Greece with almost no effort. Halved cherry tomatoes, kalamata olives, capers, and sliced garlic go into a bowl with olive oil and lemon, then over the fillets, and the oven does the rest. Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 cups cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and halved
  • 2 tablespoons capers, drained
  • 4 garlic cloves, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Steps

  1. Heat the oven to 400°F. In a bowl, toss the cherry tomatoes, olives, capers, sliced garlic, olive oil, lemon juice, and oregano until everything is coated.
  2. Pat the cod fillets dry and lay them in a baking dish. Season the tops with the salt and pepper.
  3. Spoon the tomato-olive mixture over and around the fillets, letting the tomatoes tuck into the gaps. Bake 18 to 20 minutes, until the cod flakes at the thickest point and the tomatoes have softened and burst.
  4. Scatter the chopped parsley over the top and spoon the pan juices over each fillet before serving.

Notes and swaps

Any firm white fish stands in for cod — halibut, haddock, and pollock all bake the same way, though thicker cuts may want a few extra minutes. Thin fillets cook fast, so start checking at 15 minutes and pull them the moment the flesh flakes.
