Greek chicken bowl with tzatziki

August 5, 2026 · 3 min read

Sliced lemon-oregano chicken over brown rice in a bowl with cucumber, cherry tomatoes, red onion, and a spoonful of yogurt tzatziki, scattered with fresh dill
Serving suggestion — your result will vary

Five MIND foods build this bowl: poultry, a whole grain, olive oil, and two rounds of vegetables between the toppings and the sauce. The chicken marinates in lemon, oregano, and garlic while brown rice simmers, then a cool yogurt tzatziki ties the warm and the fresh sides together. It comes together in about 30 minutes of active cooking, and it holds up as leftovers better than most bowls.

The order of operations keeps it quick. Get the chicken into its marinade first so it soaks up flavor while the rice cooks, stir the tzatziki together in the few minutes the chicken is in the pan, and everything is ready to assemble at once.

Ingredients

  • 1 1/2 lb boneless skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil, for cooking
  • 1 cup brown rice, rinsed
  • 1 cup plain yogurt
  • 1/2 cup cucumber, grated and squeezed dry
  • 1 garlic clove, grated
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon fresh lemon juice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced

Steps

  1. Whisk together the 2 tablespoons olive oil, 2 tablespoons lemon juice, oregano, minced garlic, and salt in a bowl. Add the chicken, turn to coat, and let it sit while you start the rice, or up to a few hours in the fridge.
  2. Bring a pot of salted water to a boil, add the brown rice, and simmer 25 to 30 minutes until tender. Drain any excess water and let it steam covered for 5 minutes off the heat.
  3. Heat the remaining 1 tablespoon olive oil in a skillet over medium-high. Cook the chicken 5 to 6 minutes a side until browned and cooked through, then rest it 5 minutes and slice against the grain.
  4. While the chicken cooks, stir the yogurt, grated cucumber, grated garlic, dill, and 1 tablespoon lemon juice together for the tzatziki. Taste and add a pinch of salt.
  5. Divide the rice among four bowls. Top with the sliced chicken, diced cucumber, tomatoes, and red onion, then spoon the tzatziki over the top.

Notes and swaps

Chicken thighs stand in for breasts and stay juicier, though they take a couple of extra minutes to cook through. Quinoa, farro, or barley all work in place of brown rice if you want a different whole grain under the bowl. Greek-style yogurt makes a thicker tzatziki; thin it with a splash of the lemon juice if it feels too heavy. For more crunch, add sliced romaine or a handful of chopped cucumber; for more warmth, char the chicken on a grill pan instead of the skillet. A scatter of fresh mint alongside the dill leans the whole thing brighter.

FAQ

Can I make the components ahead? Yes, and it is the reason this bowl is a good meal-prep pick. Cook the rice and the chicken, then store them separately from the tzatziki and the fresh toppings for up to four days. Keep the diced cucumber, tomato, and onion in their own container so they stay crisp, and spoon the tzatziki on only when you plate a bowl. New to reading a recipe like this? Here is how to read a recipe at a glance.

Do I have to marinate the chicken in advance? No. Even 15 minutes while the rice cooks adds flavor, though a few hours in the fridge deepens it. Whisk the marinade, coat the chicken, and move on to the rice.

How do I keep the tzatziki from turning watery? Squeeze the grated cucumber dry in a clean towel before it goes into the yogurt. Cucumber is mostly water, and skipping that step thins the sauce so it runs off the bowl instead of clinging to the chicken.

Can I serve it cold? The bowl works warm or at room temperature, so leftovers eat well straight from the fridge. Let the chicken and rice lose their chill for a few minutes and the flavors open back up.

What else can I add to round it out? A handful of kalamata olives, a few pepperoncini, or a scoop of chickpeas all fit the Greek profile and add texture. Roasted red peppers or a wedge of grilled zucchini bring another vegetable to the plate.
