Farro bowl with roasted veg and chickpeas

Ingredients
- 1 cup farro, rinsed
- 1 medium zucchini, cut into half-moons
- 1 red bell pepper, cut into strips
- 1 small red onion, cut into wedges
- 1 (15 oz) can chickpeas, drained and rinsed
- 3 tablespoons olive oil, divided
- 1/2 teaspoon salt
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 2 tablespoons warm water, plus more as needed
- 4 cups arugula or baby spinach
- 1/4 cup chopped fresh parsley
Steps
- Bring a pot of salted water to a boil, add the farro, and simmer 25 to 30 minutes until tender with a little chew. Drain and set aside.
- Heat the oven to 425°F. Toss the zucchini, bell pepper, red onion, and chickpeas with 2 tablespoons of the olive oil and the salt on a sheet pan. Roast 22 to 25 minutes, stirring once, until the vegetables are browned at the edges and the chickpeas have crisped.
- While the pan roasts, whisk the tahini, lemon juice, warm water, and the remaining 1 tablespoon olive oil until smooth. Thin with another splash of water until it pours in a ribbon.
- Divide the arugula among four bowls and pile on the warm farro, then the roasted vegetables and chickpeas. Drizzle each bowl with the lemon-tahini sauce and scatter with parsley.

Barley, brown rice, or quinoa all stand in for the farro; quinoa cooks fastest if you are short on time.
