Chickpea and vegetable curry with brown rice

This is a whole pot of the MIND plate: a legume doing the heavy lifting, two vegetables, a bed of greens, olive oil for the cooking, and a whole grain underneath. Chickpeas simmer with cauliflower in a spiced tomato sauce until the sauce thickens and clings, then a big handful of spinach wilts in at the end. A splash of coconut milk rounds the edges without turning it heavy, and everything lands over brown rice.

Ingredients

  • 1 cup brown rice
  • 3 tablespoons olive oil, divided
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 1/2 teaspoons ground turmeric
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon cayenne, or to taste
  • 1/2 teaspoon salt
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups cauliflower florets
  • 2 tablespoons coconut milk
  • 4 cups fresh spinach

Steps

  1. Bring a pot of salted water to a boil, add the brown rice, and simmer 30 to 35 minutes until tender. Drain any extra water and keep it covered.
  2. While the rice cooks, heat 2 tablespoons of the olive oil in a large pot over medium. Add the onion and cook 5 minutes until soft, then stir in the garlic and ginger and cook 1 minute more. Add the cumin, coriander, turmeric, garam masala, cayenne, and salt, and stir 30 seconds until the spices smell toasted.
  3. Add the chickpeas, diced tomatoes with their juice, and cauliflower. Pour in about a cup of water, bring to a simmer, and cook 15 to 18 minutes until the cauliflower is tender and the sauce has thickened.
  4. Stir in the coconut milk and the spinach, a handful at a time, until the greens wilt into the sauce, about 2 minutes. Taste for salt and finish with the last tablespoon of olive oil.
  5. Spoon the curry over the brown rice and serve.

Notes and swaps

Sweet potato stands in for the cauliflower beautifully; cut it into half-inch cubes and add it with the chickpeas so it has the full simmer to soften. Kale works in place of spinach, though it wants a few extra minutes to wilt. For a milder pot, drop the cayenne; for more heat, add a diced fresh chile with the onion. The coconut milk is optional — a splash smooths the sauce, but the dish holds together on the tomato base alone. Leftovers keep for four days and taste better on day two once the spices settle.

FAQ

Can I make this in advance? Yes, and it improves overnight. The curry keeps in the fridge for four days, and the spices deepen as it sits. Store the rice separately and reheat the curry with a splash of water to loosen the sauce.

Do I have to use two cans of chickpeas? Two cans make it a full, protein-forward main for four. Drop to one can for a lighter, more brothy curry, or stretch the second can with extra cauliflower if you want more vegetables in the pot.

Can I freeze it? The curry freezes well for up to three months; cool it fully, then portion into containers. Freeze the rice separately or cook it fresh. Thaw overnight and reheat gently on the stove.

What can I serve alongside? A spoon of plain yogurt, a wedge of lime, or warm flatbread all round out the bowl. A cucumber salad on the side adds a cool, crisp contrast to the spiced sauce.
