One-pan chicken with chickpeas and spinach

Ingredients
- 1 lb boneless skinless chicken thighs, cut into bite-size pieces
- 3 tablespoons olive oil, divided
- 1/2 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 2 (15 oz) cans chickpeas, drained and rinsed
- 4 garlic cloves, minced
- 1 teaspoon smoked paprika
- 6 cups fresh spinach
- 2 tablespoons fresh lemon juice
Steps
- Pat the chicken pieces dry and season with 1/4 teaspoon of the salt and the pepper. Heat 1 tablespoon of the olive oil in a large skillet over medium-high, then sear the chicken 6 to 8 minutes, turning once or twice, until browned and cooked through. Move it to a plate.
- Add the remaining 2 tablespoons olive oil to the same pan. Tip in the drained chickpeas and the remaining 1/4 teaspoon salt, spreading them in one layer. Let them crisp 5 to 6 minutes, stirring now and then, until the skins turn golden and some pop. Stir in the garlic and smoked paprika and cook 1 minute more, until fragrant.
- Add the spinach by the handful, folding it into the hot chickpeas until it wilts down, about 2 minutes. Return the chicken and any resting juices to the pan and toss to warm through.
- Take the pan off the heat and squeeze the lemon juice over everything. Toss once and serve straight from the skillet.

Chicken thighs stay juicier through the searing, but breast works if you cut it small and pull it the moment it's cooked through. For a vegetarian version, skip the chicken and use three cans of chickpeas, crisping them in two batches so the pan stays hot.
