Ingredients

  • 1 cup chopped walnuts, divided
  • 2 large eggs

Steps

  1. Heat the oven to 375°F and grease an 8x8-inch baking dish. In a large bowl, stir together the rolled oats, baking powder, cinnamon, salt, and three-quarters of the walnuts.
  2. In a second bowl, whisk the eggs until smooth, then whisk in the milk, maple syrup, and vanilla.

Notes and swaps

Any milk works — dairy, oat, almond, or soy — as long as it's unsweetened, so the maple syrup stays the only added sweetness. Swap the walnuts for pecans or chopped almonds if that's what's in the pantry, and trade the blueberries for raspberries or diced strawberries when they look better at the store. Frozen berries are fine straight from the bag; don't thaw them first, or they'll bleed through the batter.

For a firmer, more portable square, cut the milk to 1 3/4 cups. For a softer, spoonable bake, add an extra splash. A pinch more cinnamon or a little grated nutmeg deepens the warmth without touching the rest of the balance.
