Keto soup recipes

Soup is one of the most reliable keto meals. A big pot feeds the week, the flavors improve overnight, and swapping out starchy thickeners (flour, cornstarch, potatoes) for cream, cheese, and xanthan gum is usually undetectable in the finished dish.

What makes a soup keto-friendly
Three swaps cover most conventional soups:
Thickener. Replace flour or cornstarch with heavy cream, cream cheese, xanthan gum (1/4 teaspoon at a time), or just more cooking time to reduce the broth. All of these thicken a soup without carbs.
Starchy vegetables. Potatoes and corn are the main culprits. Turnips and radishes stand in for potato-adjacent texture; broccoli, cauliflower, and zucchini add body; mushrooms add depth. All run under 5g net carbs per cup.
Beans and legumes. Black beans, kidney beans, and chickpeas are high in carbs despite their fiber. Leave them out of chili and stews, or use extra ground meat and low-carb vegetables to fill the volume.

- Keto slow cooker beef stew — turnips and mushrooms stand in for potatoes, with fork-tender beef in a rich gravy. About 7g net carbs.
Batch cooking
