Keto creamy mushroom chicken

The sauce is the reason to make this. Mushrooms browned in butter until they give up their water, then deglazed and simmered with cream and Parmesan, build a pan sauce with real depth, and the seared chicken finishes right in it so nothing washes down the drain. Spinach wilts in at the end for color and a little more vegetable. It reads like a restaurant plate and cooks in one skillet.
Thighs stay juicy through the simmer, but the recipe works with breasts too if that's the preference.
Ingredients
- 4 boneless skinless chicken thighs (about 1 1/2 lb)
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons butter
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan
- 2 cups baby spinach
- 2 tablespoons chopped parsley, to serve
Steps
- Season the chicken with salt and pepper. Heat the olive oil in a large skillet over medium-high and sear the thighs until golden, 4 to 5 minutes a side, then move them to a plate.
- Melt the butter in the pan. Add the mushrooms and leave them undisturbed a couple of minutes, then toss until browned and their liquid has cooked off, 5 to 6 minutes. Stir in the garlic and thyme for 30 seconds.
- Pour in the broth and scrape up the browned bits, then stir in the cream and bring to a gentle simmer.
- Whisk in the Parmesan until the sauce thickens, then stir in the spinach until wilted.
- Return the chicken and its juices, spoon the sauce over, and simmer until cooked through (165°F), about 5 minutes. Finish with parsley.

Swaps
Boneless breasts stand in for the thighs; slice thick ones in half horizontally so they cook through before the sauce reduces too far. Any mushroom works — cremini, button, or a handful of torn wild mushrooms for more flavor. Swap the spinach for kale (add it a minute earlier so it softens) or leave the greens out entirely. Half-and-half can replace the heavy cream, though the sauce won't thicken as much, so let it reduce a little longer or add an extra tablespoon of Parmesan.
Notes
Brown the mushrooms properly. Crowding the pan or stirring too soon makes them steam and go rubbery, so give them space and let them sit until they've taken on color before tossing.
