Restaurant creamy Tuscan chicken sounds like a carb bomb. It isn't — the cream, Parmesan, and sun-dried tomatoes carry the flavor while the net carbs stay near 5g a serving.

Ingredients

  • 4 boneless skinless chicken thighs (or 2 large breasts, halved horizontally)
  • Salt and pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan
  • 1/3 cup oil-packed sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)

Steps

  1. Pat the chicken dry and season both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high. Sear the chicken 4–5 minutes a side until golden and cooked through (165°F / 74°C). Move it to a plate.
  3. Lower the heat to medium. Melt the butter, add the garlic, and cook about 30 seconds until fragrant.
  4. Pour in the cream and broth. Stir in the Parmesan, Italian seasoning, and red pepper flakes, and simmer 2–3 minutes until the sauce thickens slightly.
  5. Add the sun-dried tomatoes and spinach. Stir until the spinach wilts, about 2 minutes.
  6. Return the chicken and its juices to the pan, spoon the sauce over, and simmer 2 minutes to warm through.

Notes and swaps

Sun-dried tomatoes are the one ingredient to watch. Oil-packed ones run about 2g net carbs per tablespoon, so the 1/3 cup here accounts for most of the dish's carbs; cut it to 2 tablespoons if you want to go lower.

Boneless thighs stay juicier than breasts and forgive an extra minute in the pan. Breasts work if you pound them to an even thickness and pull them at 165°F. Serve over cauliflower rice or wilted greens to soak up the sauce.
