Keto bacon-wrapped meatloaf

Meatloaf goes keto by trading the breadcrumbs for almond flour and wrapping the whole thing in bacon, which crisps as it bakes and bastes the loaf from the outside in. Ingredients
- 1/4 cup heavy cream
- 1/2 cup almond flour
- 2 lb ground beef (80/20)
- 1/4 cup grated Parmesan
- 1 large egg
- 1 small onion, grated
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 8 slices bacon
- 2 tablespoons sugar-free ketchup (optional glaze)
Steps
- Heat the oven to 375°F (190°C) and line a rimmed sheet pan with foil.
- Stir the almond flour into the cream in a large bowl and let it sit a minute to absorb.
- Add the beef, Parmesan, egg, grated onion, garlic, tomato paste, Worcestershire, salt, pepper, and oregano. Mix with your hands just until combined — stop as soon as it comes together so the loaf stays tender.
- Shape into a loaf about 9 by 5 inches on the pan. Lay the bacon crosswise over the top, tucking the ends underneath.
- Bake 50 to 60 minutes, until the bacon is crisp and the center reaches 160°F. For a glaze, brush on the sugar-free ketchup in the last 15 minutes.
- Rest 10 minutes before slicing so the juices settle.
