The only trick is thin-cut bacon. Thick-cut bacon stays soft and chewy before the asparagus overcooks — thin strips go crispy at the same time the asparagus goes tender, which is the point. Spiral the bacon tightly so it stays put without toothpicks.

Ingredients

  • 12 asparagus spears, woody ends snapped off
  • 6 strips thin-cut bacon (not thick-cut — it won't crisp in time)
  • 1 tbsp olive oil
  • Black pepper to taste

Steps

  1. Preheat oven to 425°F / 220°C. Line a baking sheet with foil or parchment.
  2. Divide asparagus into 6 bundles of 2 spears each. Wrap each bundle tightly with one strip of bacon, starting at the bottom and spiraling upward.
  3. Place bundles seam-side down on the baking sheet. Drizzle with olive oil and season with black pepper.
  4. Roast 16–18 minutes until the bacon is crispy and the asparagus tips are just starting to color. No flipping needed.
  5. Serve immediately.

Notes and swaps

  • Add heat: a pinch of red pepper flakes before roasting.
