Keto bacon-wrapped asparagus

The only trick is thin-cut bacon. Thick-cut bacon stays soft and chewy before the asparagus overcooks — thin strips go crispy at the same time the asparagus goes tender, which is the point. Spiral the bacon tightly so it stays put without toothpicks.

Ingredients
- 12 asparagus spears, woody ends snapped off
- 6 strips thin-cut bacon (not thick-cut — it won't crisp in time)
- 1 tbsp olive oil
- Black pepper to taste
Steps
- Preheat oven to 425°F / 220°C. Line a baking sheet with foil or parchment.
- Divide asparagus into 6 bundles of 2 spears each. Wrap each bundle tightly with one strip of bacon, starting at the bottom and spiraling upward.
- Place bundles seam-side down on the baking sheet. Drizzle with olive oil and season with black pepper.
- Roast 16–18 minutes until the bacon is crispy and the asparagus tips are just starting to color. No flipping needed.
- Serve immediately.
