Serving suggestion — your result will vary

Creamy Tuscan salmon is a restaurant plate that keto barely has to touch. The sauce is already built on cream, garlic, and parmesan, and the only carb worth watching is the sun-dried tomato — keep it to a third of a cup and the whole skillet lands around 5g net carbs a serving, with 41g of protein and enough fat to keep you full for hours.

Everything happens in one pan. Sear the salmon first so the skin crisps, build the cream sauce in the fond it leaves behind, then slide the fillets back in to finish. The trick that decides the whole dish: pat the salmon bone-dry before it hits the oil, or you steam it instead of searing it.

Ingredients

  • 4 salmon fillets (about 6 oz each), patted dry
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan

Steps

  1. Pat the salmon dry and season both sides with the salt and pepper. Heat the olive oil in a large skillet over medium-high, then sear the fillets skin-side down 4 minutes until the skin crisps. Flip and cook 2 minutes more, then move them to a plate.
  2. Lower the heat to medium and add the butter to the same skillet. Cook the garlic 30 seconds until fragrant, then pour in the heavy cream and stir in the sun-dried tomatoes. Simmer 2–3 minutes until the sauce thickens slightly.
  3. Add the spinach and stir until it wilts, about 1 minute, then whisk in the parmesan until the sauce turns glossy.
  4. Return the salmon to the skillet, spoon the sauce over each fillet, and simmer 2 minutes to warm through. Serve straight from the pan.

Notes and swaps

Sun-dried tomatoes carry most of the carbs here, so measure them rather than eyeballing — a third of a cup adds flavor without pushing you over. Oil-packed jars work; drain them well and skip a little of the olive oil to balance the fat. No heavy cream? Full-fat coconut cream stands in and holds the sauce, though it shifts the flavor slightly sweet. Trade the spinach for kale or chopped chard if that's what you have, giving the sturdier greens an extra minute to soften. Serve it over cauliflower rice or zucchini noodles to catch the sauce without adding carbs.

FAQ

Is creamy Tuscan salmon keto? Yes. Salmon, cream, butter, and parmesan are all keto-friendly, and the sauce needs no flour or sugar to thicken. The only carbs come from the sun-dried tomatoes and garlic, which is why the recipe keeps the tomatoes to a third of a cup and lands near 5g net carbs a serving.

Can I use frozen salmon? Thaw it fully and pat it very dry first. Extra surface moisture is the main reason a fillet steams instead of searing, so frozen salmon works as long as you dry it well before it hits the pan.

How do I keep the cream sauce from breaking? Keep the heat at a gentle simmer once the cream goes in, and add the parmesan off a hard boil. A rolling boil is what splits a cream sauce; low and steady keeps it glossy.

What do I serve with keto Tuscan salmon? Cauliflower rice, zucchini noodles, roasted asparagus, or a simple green salad all stay low-carb and soak up the sauce. For a bigger plate, a side of sautéed mushrooms fits the flavor and adds almost no carbs.

Can I make it ahead? The salmon is best fresh, but the sauce reheats well. Warm leftovers gently over low heat with a splash of cream to loosen the sauce, since it thickens in the fridge.
