The slow cooker might be the most keto-friendly appliance in the kitchen. It's built for exactly the cuts keto leans on — cheap, tough, well-marbled meat that turns silky after hours of low, slow heat — and it does the work while you're out. Skip the potatoes and starchy thickeners, lean on low-carb vegetables and a pinch of xanthan gum, and almost any braise becomes a keto dinner.

What makes a slow cooker recipe keto-friendly
Two swaps do most of the work. First, the starch: leave out potatoes and flour, and lean on low-carb stand-ins — turnips and radishes soften like potatoes, mushrooms and celery add body, and a pinch of xanthan gum thickens a sauce without flour. One technique is worth the extra ten minutes on most of these: sear the meat first. The browned crust is where the deep, roasted flavor comes from.
