  • 4 medium zucchini, spiralized into noodles

  • 5 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup dry white wine or chicken broth
  • 2 tablespoons fresh lemon juice

  • 1/4 teaspoon black pepper
  • 3 tablespoons chopped fresh parsley

Steps

  1. Spiralize the zucchini, then set the noodles on a clean towel and pat off the surface moisture so they don't water down the sauce later. Pat the shrimp dry and season with the salt and pepper.
  2. Heat 1 tablespoon of the butter and the olive oil in a large skillet over medium-high. Add the shrimp in a single layer and cook about 1 to 2 minutes per side, until pink and just opaque. Move them to a plate.

Notes and swaps

No wine? Chicken broth deglazes just as well, with a squeeze more lemon to bring back the brightness. Shirataki noodles or spaghetti squash stand in for zucchini if you'd rather; both stay low-carb, though spaghetti squash runs a touch higher. For more heat, double the red pepper flakes.
