The sausage brings the fat and protein, the peppers and onion carry the flavor, and there's no bun or pasta doing the work. Ingredients

  • 1 lb Italian sausage links (about 5 links)
  • 2 tablespoons olive oil, divided
  • 3 bell peppers, sliced into strips (any color)
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Steps

  1. Heat 1 tablespoon of the olive oil in a large skillet over medium-high. Add the sausage links and brown them on all sides, about 6 minutes total. They won't be cooked through yet. Move them to a plate.
  2. Lower the heat to medium and add the remaining tablespoon of olive oil. Add the sliced peppers and onion with the salt and pepper, and cook 8 to 10 minutes until softened and lightly charred at the edges. Stir in the garlic and Italian herbs and cook 30 seconds more, until fragrant.
  3. Slice the browned sausage into thick coins and return it to the skillet. Nestle the pieces into the peppers, cover, and simmer 6 to 8 minutes until the sausage is cooked through and the peppers are tender. Taste, adjust the salt, and serve.
