Keto meal-prep chicken shawarma bowls

Four keto meal-prep bowls of sliced shawarma-spiced chicken thighs over cauliflower rice with garlic-yogurt sauce, cucumber, cherry tomato, red onion, and parsley
Serving suggestion — your result will vary

Cook a double batch of shawarma-spiced thighs on Sunday and lunch is handled through Thursday. This is one recipe that gets better as leftovers: the cumin, coriander, and warm spices settle into the chicken overnight, and the cauliflower rice reheats without turning to mush. Four bowls land around 8g net carbs each. Tap the recipe to 2× or 3× and you're feeding a crowd or filling a week of containers with the same ten minutes of hands-on work.

The build has parallel tracks, which is what makes it fast. The chicken marinates while you whisk the garlic-yogurt sauce and chop the toppings, so nothing waits on anything else. Sear or roast the thighs, warm the cauliflower rice, then assemble. For meal prep, the only rule that matters is packing the sauce on the side so the bowls stay crisp until the day you eat them.

Ingredients

  • 2 lb boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne
  • 1 teaspoon salt
  • 1 cup plain whole-milk Greek yogurt
  • 1 garlic clove, grated
  • 1 tablespoon fresh lemon juice
  • 4 cups riced cauliflower
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley

Steps

  1. In a bowl, whisk the olive oil, 2 tablespoons lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne, and salt into a paste. Add the chicken thighs and turn to coat. Marinate at least 30 minutes, or up to overnight in the fridge for deeper flavor.
  2. While the chicken marinates, make the sauce: stir the Greek yogurt, grated garlic, and 1 tablespoon lemon juice together with a pinch of salt. Cover and refrigerate. Dice the cucumber, halve the tomatoes, slice the onion, and chop the parsley.
  3. Sear the thighs in a hot skillet over medium-high, 5–6 minutes per side, until browned and cooked through to 165°F. Rest a few minutes, then slice across the grain. (To roast a bigger batch, spread the thighs on a sheet pan at 425°F for about 22 minutes.)
  4. Warm the riced cauliflower in a dry or lightly oiled skillet over medium heat, 4–5 minutes, until tender and no longer wet. Season with a little salt.
  5. Build each bowl: cauliflower rice on the bottom, sliced chicken on top, then the cucumber, tomato, onion, and parsley. Spoon the garlic-yogurt sauce over. For meal prep, pack the sauce separately and add it the day you eat.

Notes and swaps

Tahini sauce works in place of yogurt for a dairy-free bowl: thin 1/4 cup tahini with lemon juice, water, and a little garlic until it pours. Chicken thighs stay juicier than breast through a few days of reheating, but breast works if you slice it thin and don't overcook it. No fresh cauliflower rice? A bag of frozen riced cauliflower warms straight from the freezer in the same skillet. For more heat, double the cayenne or add a spoon of harissa to the marinade. The toppings are flexible: kalamata olives, diced avocado, or a handful of arugula all fit under the carb ceiling.

The macros here are an estimate. Log one bowl in Copper Keto Companion by saying "chicken shawarma bowl with cauliflower rice and yogurt sauce," and it runs the net carbs on the portion you actually plate, then keeps your running total as the week's lunches add up.

FAQ

How long do the bowls keep in the fridge? The cooked chicken and cauliflower rice hold 4 days in sealed containers. Pack the fresh toppings and the yogurt sauce separately and add them the day you eat, so the cucumber and tomato stay crisp.

Can I freeze the cooked chicken? Yes. The sliced shawarma chicken freezes well for up to 2 months. Freeze it without the sauce and toppings, then thaw overnight and reheat gently so it doesn't dry out.

How do I scale this for a full week? Tap the recipe to 3× for 12 bowls. The marinade, sauce, and topping quantities all scale with it. Roasting on a sheet pan at 425°F is the easier route for a triple batch than searing in the skillet.

Is cauliflower rice necessary, or can I use regular rice? Regular rice pushes a bowl well over a keto carb budget. Cauliflower rice keeps each bowl near 8g net carbs. Shredded cabbage or a bed of greens is another low-carb base if you want a change.

What makes these bowls keto? The carbs come only from the vegetables and a little yogurt, not from rice, bread, or a sugary sauce. Thighs bring the protein and fat, cauliflower rice replaces the grain, and the whole bowl stays near 8g net carbs.
