Keto lemon pound cake
August 1, 2026 · 3 min read

Almond-flour cakes have a reputation for turning out damp and crumbly, so a keto pound cake that actually slices clean feels like a small win. The trick is a little coconut flour alongside the almond — it drinks up moisture and gives the crumb structure — plus sour cream for tenderness and enough lemon to taste like a real lemon loaf, not an almond one. Each slice runs about 4g net carbs, with the glaze adding no counted sugar.
Pound cake is a merge: you cream the butter and sweetener, whisk the dry ingredients separately, then bring the two streams together with the eggs and sour cream in between. Get each stage right on its own and the fold is the only place you can go wrong. Stir just until the streaks vanish, no more.
Ingredients
- 1/2 cup butter, softened
- 3/4 cup granular keto sweetener (erythritol or allulose)
- 2 cups almond flour
- 1/4 cup coconut flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 large eggs, room temperature
- 1/2 cup sour cream
- 2 tablespoons lemon zest (about 2 lemons)
- 3 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup powdered keto sweetener (for the glaze)
- 1 tablespoon fresh lemon juice (for the glaze)
Steps
- Heat the oven to 350°F and line a 9x5-inch loaf pan with parchment. Beat the softened butter and granular sweetener with a hand mixer 2–3 minutes until pale and fluffy.
- In a separate bowl, whisk the almond flour, coconut flour, baking powder, and salt until evenly combined and lump-free.
- Beat the eggs into the creamed butter one at a time, then mix in the sour cream, lemon zest, lemon juice, and vanilla until smooth. The batter will look slightly curdled — that's fine.
- Fold the dry mix into the wet in two additions, stirring just until no streaks remain. Don't overmix. Scrape the batter into the pan and smooth the top.
- Bake 45–55 minutes, until the top is deep golden and a toothpick comes out clean. Cool in the pan 15 minutes, then lift out onto a rack to cool fully before glazing.
- Whisk the powdered sweetener with the tablespoon of lemon juice until pourable, adding a few drops more juice if it's too thick. Drizzle over the cooled loaf and let it set before slicing.

Notes and swaps
Allulose glazes better than erythritol — it stays soft and glossy instead of drying to a chalky shell, so reach for it in the drizzle if you have both. No sour cream? Full-fat Greek yogurt swaps in one for one and keeps the crumb just as tender. For a bakery-style top, score a shallow line down the center before baking so it splits evenly. The loaf keeps five days covered on the counter and freezes well by the slice.
The macros here are an estimate. Tell Copper Keto Companion "a slice of lemon pound cake" and it works out the net carbs on the portion you actually cut — the number, not a guess.
FAQ
Is lemon pound cake keto? A traditional pound cake is flour and sugar, so no. This version rebuilds it on almond and coconut flour with a granular keto sweetener, landing around 4g net carbs a slice instead of the 40g-plus in a bakery version.
Why add coconut flour instead of using all almond flour? Coconut flour is far more absorbent, so a small amount firms up an otherwise wet almond batter and gives the loaf a tighter, sliceable crumb. Don't swap it one for one — a quarter cup here does the work of much more almond flour.
Which sweetener works best? Both erythritol and allulose bake well in the loaf. Allulose browns and stays moist, which is nicer for the glaze; erythritol is cheaper and easier to find. A powdered form is smoother in the glaze than granular.
How do I keep it from sinking in the middle? Don't open the oven early, and check for doneness with a toothpick before pulling it — an underbaked center is the usual cause. Letting it cool in the pan 15 minutes before lifting it out also helps it hold its shape.
Can I make it dairy-free? Use a plant butter and swap the sour cream for a thick coconut yogurt. The crumb comes out a touch lighter but still slices, and the lemon carries the flavor.
