Beef and broccoli is one of the most keto-able takeout dishes — it's beef, broccoli, and a savory sauce. The only problem is the usual sauce, which is thick with sugar and cornstarch. Swap in coconut aminos, a keto sweetener, and a pinch of xanthan gum, and the pressure cooker gives you tender beef in a glossy sauce in about 20 minutes, around 6g net carbs.

Cook the broccoli briefly and separately so it stays bright and crisp. Pressure-cooking it with the beef the whole time turns it to mush.

Ingredients

  • 1.5 lb flank or sirloin steak, thinly sliced
  • 1 tablespoon avocado oil
  • 1/2 cup coconut aminos (or sugar-free soy sauce)
  • 1/2 cup beef broth
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon keto brown sweetener
  • 1 lb broccoli florets
  • 1/4 teaspoon xanthan gum (to thicken)
  • Sesame seeds and scallions, to serve

Steps

  1. Use the sauté setting to quickly brown the sliced beef in the oil, then turn it off.
  2. Add the coconut aminos, broth, garlic, ginger, and sweetener and stir.
  3. Seal and cook on high pressure for 10 minutes, then quick-release.
  4. Steam the broccoli separately (or add it to the pot for 0 minutes on low pressure with a quick release) so it stays bright and crisp-tender, then stir it in.
  5. Sprinkle the xanthan gum over the sauce and stir; it thickens in a minute. Serve over cauliflower rice with sesame seeds and scallions.

Notes and swaps

Coconut aminos stand in for soy sauce with far less sodium and no added sugar; a sugar-free tamari works too. Slice the beef thin against the grain (easier when it's partly frozen) so it stays tender. Xanthan gum replaces the cornstarch slurry — add it at the end and let it rest a minute. Serve over cauliflower rice to catch the sauce. Add sliced mushrooms or peppers if you like.
