Mozzarella sticks seem like the last thing you could make keto, but the only carbs are in the breadcrumbs — and an almond-flour-and-parmesan shell crisps up just as well. The trick is all in the temperature: freeze the cheese hard first so the coating has time to brown before the inside turns to a puddle. Done right, you get a crisp shell and a real cheese pull, around 3g net carbs.

This is the one recipe in the series where freezing isn't optional. Skip it and you'll have melted cheese welded to the basket.

Ingredients

  • 12 mozzarella string cheese sticks
  • 1 cup almond flour
  • 1/2 cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • 2 eggs, beaten
  • Salt and pepper
  • Avocado oil spray
  • Sugar-free marinara, to serve

Steps

  1. Freeze the string cheese for at least 1 hour — this is the most important step, or they'll melt before the coating crisps.
  2. Mix the almond flour, Parmesan, Italian seasoning, salt, and pepper. Dip each frozen stick in egg, then coat in the almond mixture; for a thicker shell, dip in egg and coat a second time.
  3. Return the coated sticks to the freezer for 10 more minutes while the air fryer heats to 390°F (200°C).
  4. Arrange in a single layer, spray with oil, and air fry 6–8 minutes, watching closely, until golden. Don't overcook or they'll burst.
  5. Cool 2 minutes and serve with warm sugar-free marinara.

Notes and swaps

Freeze the coated sticks twice — once before breading and once after — for the best odds of a clean melt. A double coat (egg, crumb, egg, crumb) gives a sturdier shell. Watch them closely in the last couple of minutes; the line between golden and burst is short. Serve with sugar-free marinara or ranch. These are best fresh and hot, straight from the basket.
