Garlic-butter steak with wilted greens

A good steak needs almost nothing, and this adds only what earns its place: a sear, garlic butter, and greens wilted in the drippings. It's about 15 minutes start to finish and lands near 4g net carbs.

Ingredients

  • 1 steak, about 8 oz (ribeye or sirloin)
  • 2 tablespoons butter
  • 2 cloves garlic, smashed
  • 2 generous handfuls of greens (spinach, chard, or kale)
  • Salt and pepper

Steps

  1. Salt the steak well and let it sit while the pan heats. A dry surface sears better than a cold, wet one.
  2. Get a heavy pan hot. Sear the steak 3–4 minutes a side for medium-rare, then move it to a plate to rest.
  3. Drop the heat to medium. Add the butter and garlic to the same pan and let it bubble for a minute.
  4. Add the greens and toss until they wilt, about two minutes. Season.
  5. Slice the steak, pile it on the greens, and spoon the garlic butter over the top.

Notes

Let the steak rest the full five minutes before slicing, or the juices end up on the board instead of in the meat. The garlic is the second-biggest carb source here after the greens, so drop a clove if you're counting closely.
