Nordic Instant Pot mashed root vegetables

Rotmos — Swedish mashed root vegetables — is a staple of the Nordic comfort plate, the bed that sits under sausages, pork, and stews. It's swede (rutabaga), carrot, and potato mashed together into something creamier and more interesting than plain mashed potato, and the pressure cooker softens the notoriously hard swede in minutes instead of a long boil.
A pinch of allspice or white pepper is the traditional Swedish seasoning that sets it apart from an ordinary mash.
Ingredients
- 1 large swede (rutabaga), peeled and cubed
- 3 carrots, cut in chunks
- 2 potatoes, peeled and cubed
- 1.5 cups vegetable or chicken broth
- 2 tablespoons butter
- 1/4 cup milk or cream
- 1/4 teaspoon ground allspice or white pepper
- Salt and pepper
Steps
- Put the swede, carrots, and potatoes in the pressure cooker with the broth.
- Seal and cook on high pressure for 12 minutes, then quick-release.
- Drain off most of the liquid, reserving a little. The vegetables should be very soft.
- Add the butter, milk, and allspice, and mash to a coarse, creamy texture, adding a splash of the reserved liquid if needed.
- Season well with salt and pepper and serve hot.
Notes and swaps
Swede is the star and the reason this isn't just mashed potato — it brings a faint sweetness and a golden color. Cut it small so it cooks evenly. Adjust the texture to taste: more liquid for smooth, less for rustic and coarse. Leave out the dairy and use a little olive oil for a vegan version. Serve it under Swedish meatballs, pork roast, or any Nordic dinner with good gravy.
