How to halve or double any recipe

Most of a recipe scales by simple arithmetic: pick a factor, multiply each ingredient, done. The mistakes happen on the four things that ignore your factor — cooking time, the size of the pan, the seasoning, and the eggs. Get those right and you can shrink a dinner-for-six down to two, or stretch a favorite up for a crowd, without a second guess.

The one rule that covers most of it

Choose your factor and apply it to every ingredient. Halving means multiply by 0.5; doubling means multiply by 2; one-and-a-half batches means multiply by 1.5. Flour, fat, liquid, sweetener, cheese — each gets the same treatment.

A recipe calling for 200 g almond flour, 4 oz cream cheese, and 30 g butter, halved, becomes 100 g almond flour, 2 oz cream cheese, and 15 g butter. That part is safe to do on autopilot.

What scales linearly, and what doesn't

The trouble is that four things don't move with your factor. Two of them stay put, one changes in the opposite direction you'd expect, and one can't be cut cleanly at all.

Cooking time barely moves

Doubling a batch does not double the time in the oven. A tray of chicken thighs is done when the meat hits temperature, and a second tray beside it reaches that temperature on roughly the same clock. What changes is airflow and crowding, not the physics of one piece cooking through. Keep the original time as your starting point and check for doneness a few minutes early, since a fuller oven can run a little slower.

Pan size has to change

This is the one people skip, and it's the one that ruins the dish. Double a lasagna and leave it in the same 8×8, and it overflows or cooks unevenly. Halve a sheet-pan dinner onto the same full sheet, and the thin layer scorches. The depth of the food drives how it cooks, so the pan has to match the new volume — a bigger dish for a doubled batch, a smaller one for a half. Aim to keep the food at about the same depth it had in the original.

Salt and strong flavors scale by taste

Salt, garlic, chili, and anything sharp don't want a strict multiply. Perception of these isn't linear, and a doubled hit of cayenne often lands harsher than twice as hot. Scale them by taste: add a bit less than the math says, taste, then bring it up. You can always add more salt; you can't take it back out.

Leaveners scale, but watch the number

Baking soda and baking powder do follow the factor on paper — half a teaspoon becomes a quarter, a teaspoon becomes two. The catch is that leavening is sensitive, and a small error is a bigger deal in a scaled batch. Measure these carefully rather than eyeballing, and if a doubled amount looks off for the volume of batter, trust the recipe's ratio over a round number.

The egg problem

You can't cleanly use 1.5 eggs. When your factor lands you on a fraction of an egg, you have two honest options. Beat one egg in a bowl, then use half of it by volume (a large egg is about 3 tablespoons beaten, so half is about 1.5 tablespoons). Or round to the nearest whole egg and accept a slightly richer or drier result — rounding up adds moisture and structure, rounding down does the opposite.

For most savory dishes, rounding is fine. For a bake where the egg count carries the structure, measure the half. When in doubt, round toward more egg in custards and toward fewer in things that shouldn't get eggy.

A worked example: halving a four-serving skillet

Say a skillet dinner serves four: 1 lb ground beef, 2 eggs, 1 cup shredded cheese, 1 tsp salt, 1/2 tsp baking powder, cooked 25 minutes in a 10-inch pan. You want two servings, so your factor is 0.5.

  • Beef: 1 lb → 8 oz. Straight multiply.
  • Cheese: 1 cup → 1/2 cup. Straight multiply.
  • Baking powder: 1/2 tsp → 1/4 tsp. Scales, measured carefully.
  • Eggs: 2 → 1. Lands on a whole number, so no fraction to fuss.
  • Salt: 1 tsp → start at a scant 1/2 tsp, taste, adjust up.
  • Pan: 10-inch → an 8-inch skillet, to hold the same depth.
  • Time: roughly 25 minutes still, checked for doneness around 20.

Everything obeyed the factor except the salt, the pan, and the clock — which is the whole lesson in one dinner.
