Are carrots keto?

Carrots sit in the genuinely borderline category — not a safe-eat-freely vegetable the way leafy greens are, but also not something that's automatically out. The net carb count per carrot is manageable if you're eating one; it adds up if you're eating several.

The jump from one carrot to a cup of carrot sticks or a glass of juice is significant. The fiber in whole carrots (~2 g) doesn't save much against the total carbs; the net carb reduction is minor.
When carrots fit on keto
A single medium carrot sliced into a salad, a stew, or eaten with a dip is a different situation from a bag of baby carrots while watching TV. In a meal that's otherwise very low in carbs, one carrot adds 6–7 g to the count — manageable in most 20–50 g ceilings.
The context that causes problems:
- Carrot sticks as a snack (easy to eat a cup or more without noticing)
- Carrot juice or smoothies with multiple carrots (juice removes the fiber and concentrates the sugars)

Are cooked carrots higher in net carbs than raw? Slightly. Cooking breaks down some fiber and concentrates the sugars, but the difference is small — a half-cup of cooked carrots is roughly the same net carbs as one medium raw carrot. The glycemic index of cooked carrots is higher, but for total-carb tracking on keto, the difference is minor.
Can I eat carrots if I'm doing 50 g carbs per day? At 50 g/day, one or two carrots in a meal fits easily. The more relaxed ceiling gives you more room for borderline vegetables.
Are baby carrots lower in carbs than regular carrots? Baby carrots have similar net carbs per gram to full-size carrots. Ten baby carrots (~85 g) has roughly 7–8 g net carbs — similar to a medium carrot.
