Kåldolmar — cabbage rolls — are old-fashioned Nordic comfort food, tender cabbage leaves wrapped around a lightly spiced meat filling stretched with a little barley or rice. They take a bit of patience to roll, but they bake hands-off in a light gravy and reward you with a whole tray. Served with lingonberry and potatoes, they're a classic Sunday plate.

Using barley in the filling is a small Nordic upgrade: it adds whole-grain fiber and a pleasant chew, and stretches the meat further.

Ingredients

  • 1 head green cabbage
  • 3/4 lb ground beef
  • 1/4 lb ground pork
  • 1/2 cup cooked barley or rice
  • 1 small onion, finely diced
  • 1 egg
  • 1/2 cup milk
  • 1/4 teaspoon allspice
  • 2 tablespoons butter
  • 1.5 cups beef broth
  • Salt and pepper
  • Lingonberry jam, to serve

Steps

  1. Core the cabbage and simmer the whole head in salted water 8–10 minutes, peeling off leaves as they soften. Trim the thick central rib of each leaf flat.
  2. Mix the beef, pork, cooked barley, onion, egg, milk, allspice, salt, and pepper into a soft filling.
  3. Place a spoon of filling on each leaf, fold in the sides, and roll up. Set seam-side down in a buttered baking dish.
  4. Dot with butter and pour the broth around the rolls. Bake at 375°F (190°C) for 40–45 minutes, basting once, until browned.
  5. Spoon the pan juices over the rolls and serve with lingonberry jam and boiled potatoes.

Notes and swaps

Freezing the cabbage head overnight and thawing it softens the leaves without boiling, if you'd rather skip that step. Allspice is the seasoning that makes the filling taste Swedish. Cooked barley is the more traditional and higher-fiber choice over rice. Make extra and freeze them — they reheat well in their gravy.
