Keto shrimp stir-fry

High heat and dry shrimp are what separate a proper stir-fry from a steamed, watery version. The pan needs to be hot before anything goes in — a drop of water should evaporate instantly. If you crowd the shrimp they'll steam instead of sear, which is the main thing to avoid.

Ingredients
- 300g raw shrimp, peeled and deveined
- 2 cups broccoli florets
- 1 cup snap peas, strings removed
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 1 tbsp avocado oil or neutral oil, for cooking
- 1 tsp rice vinegar
- Pinch of red pepper flakes (optional)
- Sesame seeds to finish
Steps
- Pat the shrimp dry — wet shrimp steam rather than sear.
- Mix the sauce: soy sauce, sesame oil, rice vinegar, and red pepper flakes in a small bowl. Set aside.
- Heat avocado oil in a wok or large skillet over high heat until shimmering.
- Add broccoli and snap peas. Stir-fry 3–4 minutes until bright green and just tender. Push to the side.
- Add a little more oil if needed. Add shrimp in a single layer and cook 1 minute per side until pink. Don't crowd them.
- Add garlic and ginger, stir 30 seconds until fragrant.
- Pour in the sauce, toss everything together, and cook 1 minute more.
- Serve immediately, scattered with sesame seeds.

Notes and swaps
- No snap peas? Zucchini or green beans work. Keep the broccoli — it holds up to the heat better than most vegetables.
- Coconut aminos in place of soy sauce if you're avoiding it; slightly sweeter, similar carb count.
- Cauliflower rice underneath adds volume for under 4g extra net carbs and makes this feel like a full bowl.
- Leftovers: shrimp gets rubbery reheated. Eat this one fresh.
